'Tis the season for backyard BBQ's, camping, hiking, and enjoying nights outside by the pool. It is s'more season and in lieu of standing around a hot fire holding sticks and hoping that children avoid burns you can make these s'more cookie bars. I think I was inspired by the end caps in Wally World and Publix lined with graham crackers, chocolate bars, and marshmallows.Here's the recipe, but I must warn I have not tested it.
3/4 cup margarine or butter, softened
1/2 cup sugar
1 egg
1 tsp. vanilla
20 whole graham crackers, crushed (3 1/2 cups graham cracker crumbs)
1/2 cup flour
1/2 tsp. salt
7 Hershey chocolate bars (1.55 oz. each)
4 cups miniature marshmallows
Beat margarine and sugar with an electric mixer on medium speed until light and fluffy. Blend in egg and vanilla. Stir in crushed graham crackers, flour, and salt. Press 2 cups of mixture onto bottom of a greased 13" x 9" pan. Place chocolate bars, side by side, over graham cracker mixture in pan. Sprinkle the marshmallows on top of the chocolate bars. Crumble remaining graham cracker mixture over marshmallows. Bake in a preheated 350 degree oven for 20 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars. Makes about 24 bars.
