Wedding showers bring June flowers....

Go Mom! She and a few other ladies at the church pulled of Katie's bridal shower and made the BUMC basement look so good. I hear the basement was filled with a Christmas tree and other unmentionables--horrors. A little birdy also told me that since Katie is having a beach wedding some fish-y table clothes and seashells almost made the cut, well all I have to say is thank goodness for simplicity! Million dollar sandcastle pound cake courtesy of Gail and Nordic ware and the delicious lemon cheese squares-very easy and very good!Lemon squares:
1 package lemon cake mix
1 stick margarine
1 egg
Mix together (use wooden spoon--batter will be very thick). Spread in a 13"x9" pan. You may need to press in out with your hands to achieve complete coverage.
8 oz. package cream cheese
1 lb. box powdered sugar
2 eggs
Using mixer, cream the cream cheese, 2 eggs and powdered sugar. Mix thoroughly and pour over the crust mixture.
Bake at 350 degrees for 30-40 minutes. Should be set in the center and a little brown on the edges. Test using a cake tester.
Cool completely and cut into squares.Million dollar pound cake:
1 lb. margarine
3 c. sugar
6 eggs
4 c. all purpose flour
3/4 c. milk
1 tsp. vanilla extract
1 tsp. almond extract
Cream margarine, add sugar and beat well. Add eggs one at a time. Add vanilla and almond extracts. Add flour, alternating with the milk. Spray the pan with Baker's Joy and pour batter into prepared pan. Cook in center of oven at 300 degrees for 1 1/2 hours.
*If you use a decorative pan only fill it 2/3 full and fill a loaf pan with the remaining batter. This extra cake will be done in 45 minutes to 1 hour. Enjoy. This is a never fail, classic recipe.
